Preparation Time: 20 minutes Makes 8-10 servings
Ingredients:
6 heads of garlic 3-4 cups olive oil 2 sprigs thyme 3 tsp. oregano 3 sprigs rosemary 1 Tbs. black peppercorns 2 hot peppers 2 packages goat's cheese (Chevre) 7 ounces Tnuva feta cheese
Instructions:
1. Preheat oven to a high temperature (390°). Remove the outer skin of the heads of garlic and separate the heads slightly (not all the way). Spread olive oil on the heads of garlic. Wrap each head separately in aluminum foil and place in a baking pan. 2. Bake for 30-40 minutes until the garlic softens. Remove from the foil and let cool. 3. Place garlic heads in a glass jar. Add the other ingredients and cover with olive oil, closing the jar well. Place jar in a cool, dark place for 5 days. After opening the jar, refrigerate. 4. Serve the garlic with slices of goat's cheese, Tnuva feta cheese and fresh bread.
