Mousse Cheesecake on a Bed of Peaches

No-Bake
Supplies:
1 cake -Biscuit or cookie (sponge) 26 cm in diameter and 1cm thickness of good quality.

Preparation Time: 30 Minutes

Mousse Cheesecake:
2 containers of cheese to whip 32% from the style of …
1 cup sugar
14 grams Kosher gelatin  
1/3 cup warm milk
17.6oz Tnuva White Cheese
1 Large tin of canned peaches in syrup (28.2oz)

Topping:
Preserved peaches
Fresh mint leaves

Instructions:
1. Place the sponge cake in the pan. Pour onto it 3/4 cup of syrup from the canned peaches. Cut the peaches into slices and place on top of the cake.
2. Whip the cheese with the sugar till standing. Melt the gelatin in the warm milk. Add the cheese through a fine strainer and stir.
3. Fold the icing into the cheese and mix till achieves a unified texture. Pour into the pan and chill well overnight.
4. Before serving, decorate the peaches with mint leaves. Serve.
